This simple Peach Cobbler Recipe for two is perfect for entertaining friends and family over the festive season. It’s kind of crumbly on the outside and fluffy on the inside (hint – it involves big fat juicy ripe PEACHES!)

Ingredients

  • 3 tbsp brown sugar
  • 2 tsp cornstarch
  • 1/4 cup water
  • 1-1/2 cups sliced fresh or frozen peaches
  • 1 tbsp butter
  • 1 tsp lemon juice
  • 1/3 cup all-purpose flour
  • 2 tbsp sugar
  • 1/2 tsp baking powder
  • Pinch salt
  • 2 tbsp whole milk
  • 4-1/2 tsp butter, melted
  • 1/4 tsp grated orange zest

Instructions

1. In a small saucepan, combine brown sugar, cornstarch and water until smooth.
2. Add peaches; bring to a boil and cook and stir for 2 minutes.
3. Reduce heat to low; stir in butter and lemon juice.
4. For topping, combine flour, sugar, baking powder and salt in a bowl.
5. Stir in milk, butter and orange zest.
6. Transfer hot peach mixture to an ungreased 2-cup baking dish. Spoon topping over peaches.
7. Bake, uncovered, at 200° until golden brown, about 25 minutes.
