Banana Bread Recipe
The perfect afternoon treat!
Makes 1 loaf
Ingredients
- 3 ripe bananas well mashed
- 2 eggs beaten well
- 2 tsp grated orange zest
- 2 cups wholemeal flour
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 3/4 cup Caster sugar
- 3/4 cup coarsely chopped walnuts
Method
- Preheat oven to 180°C / Gas 4
- Grease a loaf tin
- Combine the bananas, eggs and orange zest in a large bowl.
- Add the sifted flour, cinnamon, salt and baking soda and mix together.
- Add the sugar and walnuts (saving a few to decorate) mix thoroughly.
- Pour into the prepared tin, top with the remaining walnuts and bake for 1 hour and 10 minutes, or test with a skewer.
Serve warm or allow to cool, then toast served with butter.
Note: The bread will keep for several days in an airtight container. Alternatively cut into thick slices, wrap individually and store in an airtight container in the freezer for up to a month.
