Banana Bread Recipe

The perfect afternoon treat!

Makes 1 loaf

Ingredients

  • 3 ripe bananas well mashed
  • 2 eggs beaten well
  • 2 tsp grated orange zest
  • 2 cups wholemeal flour
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3/4 cup Caster sugar
  • 3/4 cup coarsely chopped walnuts

 

Method

  1. Preheat oven to 180°C / Gas 4
  2. Grease a loaf tin
  3. Combine the bananas, eggs and orange zest in a large bowl.
  4. Add the sifted flour, cinnamon, salt and baking soda and mix together.
  5. Add the sugar and walnuts (saving a few to decorate) mix thoroughly.
  6. Pour into the prepared tin, top with the remaining walnuts and bake for 1 hour and 10 minutes, or test with a skewer.

Serve warm or allow to cool, then toast served with butter.

Note: The bread will keep for several days in an airtight container. Alternatively cut into thick slices, wrap individually and store in an airtight container in the freezer for up to a month.
