Ingredients

  • 1 cup wholemeal pasta
  • 1/4-1/2 of a head of broccoli
  • 1/4-1/2 of a cauliflower
  • 1/2 a punnet of cherry tomatoes
  • 1/2 a jar of pesto sauce
  • 1 small tin tuna in spring water (can be substituted for chicken or beans)

Optional: 1/2 cup low fat cheese and/or fresh chilli to taste

Method

  1. Bring a medium-sized pot of water to boil.
  2. While waiting for the water to boil, chop the cauliflower and broccoli into small florets (tip: use the stems for extra nutrition).
  3. Once the water is boiling, add pasta, cauliflower and broccoli - cook until the pasta is al dente, meaning it is still slightly firm when bitten.
  4. Wash the cherry tomatoes and either chop them in half or keep them whole.
  5. Drain the water from the pot.
  6. Add pesto sauce, tuna and cherry tomatoes into the pot and stir to combine.
  7. To serve, add cheese and/or chilli to the top.
